Instructions

Step 1:

  • In a mixing bowl, mash the ripe bananas until smooth.

Step 2:

  • Add the whole wheat flour, baking powder, honey or maple syrup, vanilla extract, almond milk, and a pinch of salt to the mashed bananas.
  • Mix until well combined into a smooth batter.

Step 3:

  • Heat a non-stick pan or griddle over medium heat.
  • Once hot, pour a ladleful of batter onto the pan to form a pancake.
  • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  • Repeat with the remaining batter.

Step 4:

  • Serve the banana pancakes warm, topped with sliced bananas, berries, a dollop of Greek yogurt, and a drizzle of honey if desired.

  • For extra fiber, you can add a tablespoon of ground flaxseed or chia seeds to the batter.
