Description

This recipe blends luxurious caviar with soft blini for a unique and sophisticated savory experience that’s perfect for entertaining guests or enjoying on special occasions.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon melted butter
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Caviar (preferably sturgeon or salmon)
  • Sour cream or crème fraîche, for serving
  • Fresh chives or dill, for garnish

Instructions

Step 1: Prepare the Blini Batter

  • In a mixing bowl, whisk together the flour, milk, eggs, melted butter, baking powder, and salt until smooth.
  • Let the batter rest for about 10 minutes to allow the baking powder to activate.

Step 2: Cook the Blini

  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour about 2 tablespoons of batter onto the skillet for each blini, spreading it out slightly to form a small pancake.
  • Cook for 1-2 minutes, or until bubbles form on the surface of the blini and the edges begin to lift.
  • Flip the blini and cook for an additional 1-2 minutes, or until lightly golden brown on both sides.
  • Repeat with the remaining batter, adding more butter or oil to the skillet as needed.

Step 3: Assemble the Caviar on Blini

  • Once all the blini are cooked, let them cool slightly.
  • Place a dollop of sour cream or crème fraîche on each blini.
  • Top with a small spoonful of caviar.
  • Garnish with fresh chives or dill.

Step 4: Serve and Enjoy!

  • Arrange the caviar-topped blini on a platter and serve immediately as a delightful appetizer for your New Year’s Eve celebration.

Notes

  • Make sure not to overcrowd the skillet when cooking the blini to ensure even cooking.
  • Keep the cooked blini warm in a low oven while you finish cooking the remaining batter.
  • For extra indulgence, serve the caviar on blini with champagne or vodka cocktails.
