Instructions

Step 1:

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic.
  • Cook until softened, about 5 minutes.

Step 2:

  • Pour in the whole peeled tomatoes, crushed tomatoes, and vegetable broth.
  • Stir in sugar, dried basil, dried oregano, salt, and pepper.
  • Bring the mixture to a simmer.

Step 3:

Step 4:

  • Once the soup has thickened slightly, remove it from heat.
  • If desired, use an immersion blender to puree the soup until smooth.
