Instructions

Step 1:

  • In a small bowl, whisk together the plain yogurt, honey or maple syrup, and vanilla extract until well combined.
  • Set aside.

Step 2:

  • In a saucepan, mix the cornstarch and salt.
  • Gradually pour in the yogurt mixture while whisking continuously to avoid lumps.

Step 3:

  • Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and begins to bubble.
  • This usually takes about 5-7 minutes.

Step 4:

  • Once the pudding has thickened, remove it from the heat and pour it into individual serving bowls or glasses.
  • Let it cool for a few minutes at room temperature, then cover and refrigerate until chilled and set, typically for at least 1 hour.

Notes

  • Keep the heat low: When cooking the mixture of milk, cornstarch, and sugar, it’s important to keep the heat low and constantly stir the mixture. This helps prevent lumps from forming in the pudding.
  • Let the pudding cool before adding yogurt: After the milk mixture has thickened and been taken off the heat, allow it to cool for a few minutes before adding the yogurt. Adding the yogurt to hot pudding can cause it to separate or curdle.
  • Chill the pudding before serving: Once the pudding has been prepared, it’s best to chill it in the refrigerator for at least a couple of hours before serving. This allows it to set and develop a creamy texture.
