Description

It is a traditional Jewish dish that combines deliciousness and health, adding a touch of flavor and care to the Hanukkah celebration.

Ingredients

Scale
  • 4 large russet potatoes, peeled
  • 1 onion
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying

Instructions

Step 1: Grate Potatoes and Onion

  • Using a box grater or a food processor fitted with a grating attachment, grate the peeled potatoes and onion.
  • Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.

Step 2: Mix Ingredients

  • In a large mixing bowl, combine the grated potatoes and onion with beaten eggs, flour, salt, and black pepper.
  • Mix well until everything is evenly combined.

Step 3: Heat Oil

  • In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking.

Step 4: Fry Latkes

  • Take a spoonful of the potato mixture and carefully drop it into the hot oil, flattening it slightly with the back of the spoon to form a pancake shape.
  • Fry the latkes in batches, making sure not to overcrowd the skillet.
  • Cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Once cooked, transfer the latkes to a paper towel-lined plate to drain excess oil.

Step 5: Serve

  • Serve the latkes hot, accompanied by applesauce and sour cream if desired.

Notes

  • Make sure to squeeze out as much moisture as possible from the grated potatoes and onion to ensure crispy latkes.
  • Keep the oil at the right temperature; too hot, and the latkes will burn, too cold, and they’ll become greasy.
  • Feel free to customize your latkes by adding ingredients like shredded carrots, zucchini, or herbs for extra flavor.
