Ingredients

  • 2/3 cup superfine sugar
  • 2 cups double cream or heavy cream
  • 1 cup raspberries for garnish

Instructions

Step 1:

  • Grate lemon zest finely and juice the lemons, removing seeds.
  • In a saucepan, combine lemon juice, zest, and sugar.
  • Simmer gently for about 4 minutes, then remove from heat.

Step 2:

  • In another pot, bring cream to a gentle boil over low heat for 5 minutes. Avoid rapid boiling.
  • Slowly whisk lemon syrup into the hot cream. Strain the mixture.

Step 3:

  • Let it cool slightly, then pour into ramekins or glasses. Chill for at least 4 hours.
  • Before serving, let it sit at room temperature for 5 minutes. Garnish with berries.

Notes

  • Cook the heavy cream over low heat to avoid burning.
  • Keep a close watch as it can go from simmering to boiling rapidly.
  • Simmering removes water from the cream, leaving behind fat, which reacts with lemon juice to thicken the posset.
