Description

This delicious Matzo-Crusted Chicken Tenders for Passover will be a mouth-watering treat for a festive family reunion.

Ingredients

Scale
  • 1 lb (450g) boneless, skinless chicken breasts, cut into strips
  • 2 cups matzo meal
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil, for greasing

Instructions

Step 1:

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.

Step 2:

  • In a shallow dish, combine matzo meal, garlic powder, onion powder, paprika, salt, and pepper.
  • Mix well to evenly distribute the seasonings.

Step 3:

  • Dip each chicken strip into the beaten eggs, allowing any excess to drip off.
  • Then coat the chicken strip in the seasoned matzo meal mixture, pressing gently to adhere the coating evenly.

Step 4:

  • Place the coated chicken tenders on the prepared baking sheet, leaving a little space between each piece.
  • Lightly spray the tops of the tenders with cooking spray or drizzle with olive oil.

Step 5:

  • Bake in the preheated oven for 18-20 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.

Notes

  • For extra flavor, you can add herbs like thyme or rosemary to the matzo meal mixture.
  • Serve the chicken tenders with your favorite dipping sauce, such as honey mustard or tzatziki.
  • Make sure to cut the chicken strips into uniform sizes to ensure even cooking.
