Description

Instant Pot Frittata is a quick and easy breakfast option that combines crispy bacon, fresh veggies and tangy cheese for a delicious start to your day.


Ingredients

  • Cooking spray
  • 1 teaspoon olive oil
  • 4 strips bacon, diced
  • 1/2 cup finely chopped onion
  • 1/2 cup chopped red bell pepper
  • 7 large eggs
  • 1 1/2 cups baby spinach leaves, coarsely chopped
  • 1/2 cup shredded cheddar cheese (around 2 ounces)
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 to 6 grape tomatoes, thinly sliced crosswise
  • Sliced green onions, optional, for garnish
  • Sour cream, optional, for garnish

Instructions

Step 1:

  • Grease a 7-inch baking pan with cooking spray and line the bottom with parchment paper if available. If not, generously grease the pan.

Step 2: 

  • Select the sauté function on the Instant Pot, add olive oil, and when it’s hot, add diced bacon.
  • Cook for about 4 minutes, then add onion and bell pepper and cook for 1 to 2 minutes more.
  • Remove bacon and veggies, wipe the inner pot, and add 1 cup of water.

Step 3:

  • Whisk eggs in a bowl until blended.
  • Add spinach, cheese, salt, pepper, sautéed bacon, onion, and bell pepper. Mix well.
  • Pour the egg mixture into the prepared baking dish and top with sliced tomatoes.
  • Place the baking dish on a trivet and lower it into the Instant Pot.
  • Secure the lid, set to high pressure, and cook for 12 minutes.
  • Allow natural pressure release for 10 minutes, then manually release remaining pressure.

Step 4:

  • Carefully remove the frittata from the Instant Pot and let it stand for 5 minutes.
  • Serve in the pan or transfer to a plate. Garnish with green onions and sour cream if desired.

Notes

  • Once the egg mixture is mixed, make sure it is well blended before cooking to ensure that the vegetables and cheese are evenly distributed throughout the batter.
  • Before cooking in the Instant Pot, be sure to sprinkle the top of the egg mixture evenly with sliced grape tomatoes, which will add color and texture.
  • After cooking, let the frittata sit in the Instant Pot for a few minutes and then keep it warm with the keep warm function, which ensures that the batter is completely set and also makes it easier to cut into even portions.
