  • 1 pound (450g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup (115g) unsalted butter
  • 1/4 cup (60ml) extra-virgin olive oil
  • 1/4 cup (60ml) dry white wine
  • 1/4 cup (15g) chopped fresh parsley
  • 1 tablespoon (15ml) freshly squeezed lemon juice
  • Salt and black pepper to taste
  • Red pepper flakes (optional, for heat)
  • Grated Parmesan cheese for serving

Instructions

Step 1: Prepare the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the linguine according to package instructions until al dente.
  • Reserve 1/2 cup of pasta water, then drain the linguine.

Step 2: Cook the Shrimp

  • In a large skillet, heat the olive oil over medium heat.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes if desired.
  • Cook the shrimp until they turn pink and opaque, about 2-3 minutes per side.
  • Remove the shrimp from the skillet and set aside.

Step 3: Make the Sauce

  • In the same skillet, melt the butter over medium heat.
  • Pour in the white wine and lemon juice, stirring to combine.
  • Let the sauce simmer for 2-3 minutes to reduce slightly.
  • Return the cooked shrimp to the skillet.
  • Add the cooked linguine and chopped parsley to the skillet, tossing to coat everything evenly.
  • If the sauce is too thick, add some of the reserved pasta water to loosen it up.

Step 4: Serve

  • Divide the shrimp scampi pasta among serving plates.
  • Garnish with additional chopped parsley and grated Parmesan cheese if desired.
  • Serve immediately and enjoy your delicious dinner!
