  • 4 large tomatoes, diced
  • 1 English cucumber, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons fresh lemon juice
  • Optional toppings: chopped fresh basil, croutons, or a dollop of Greek yogurt

Instructions

Step 1:

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic.
  • Sauté until the onion is translucent and fragrant, about 3-4 minutes.

Step 2:

  • Add the diced tomatoes, cucumber, vegetable broth, dried oregano, and dried basil to the pot.
  • Season with salt and pepper to taste.
  • Bring the mixture to a simmer, then reduce the heat to low.
  • Cover and let it simmer for about 15 minutes, allowing the flavors to meld together and the vegetables to soften.

Step 3:

  • Once the vegetables are tender, remove the pot from the heat.
  • Use an immersion blender to carefully blend the soup until smooth.
  • Alternatively, you can transfer the soup in batches to a blender and blend until smooth, being cautious of the hot liquid.

Step 4:

  • Return the blended soup to the pot if necessary.
  • Stir in the fresh lemon juice, adjusting the seasoning if needed.
  • Taste and add more salt and pepper if desired.

Notes

  • Use fresh, ripe ingredients – since the soup is made up of predominantly fresh vegetables, make sure to use the freshest and ripest tomatoes and cucumbers to ensure the best flavor.
  • Blend it well- blending the soup until smooth is key to attaining a creamy and smooth consistency. A hand-held blender or food processor can make the blending process easier and yield better results.
  • Serve it chilled – serving the soup chilled can enhance the flavor and provide a refreshing experience, especially during warm weather. It can also be garnished with some fresh herbs or croutons for added texture and flavor.
